Fish, there are so many variations of fish.  From salmon, to haddock, to cod and so much more.  There may time that you just want to have fish a nice simple fish, perhaps salmon with some lemon done in the broiler or you find that you developed or have already have an allergy to other meats.  Give fish a try!

Salmon  – Lemon


Simple Dill Salmon

4 5 oz salmon filets

4 tbsps. fresh lemon juice, divided

1 tsp sugar

1 tsp dried dill

1/2 tsp garlic salt

2 tbsp. extra virgin olive oil

3 cup of spinach or arugula (or salad of choice)

Preheat oven to 400 degrees F. Place salmon skin side down, on a 15 x 10 inch rimmed baking sheet or broiler pan.  Drizzle evenly with 2 tbsps. of lemon juice.  Sprinkle sugar, dill and garlic salt.  Bake 10 to 15 mins or until fish flakes easily with a fork.

Meanwhile, for the dressing, in a small bowl combine oil and remaining 2 tbsps. lemon juice.  Place arugula or the spinach in a medium bowl.  Drizzle with the dressing just before serving.  Serve salmon with dressed spinach. (or salad of choice)
