1/4 cup butter at room temperature

1/2 tsp grated lemon zest

1/2 tsp salt

1/2 tsp dried oregano

1/2 tsp  dried mint

1/2 tsp dried thyme

1/4 tsp garlic powder

1/4 onion powder

1 roasting chicken 6-7 pounds

Preheat oven to 375 degrees.  In bowl, combine butter, zest, salt, oregano, mint, thyme,  garlic powder and onion powder.  Place chicken in large roasting pan.  Rub mixture over the skin and if desired underneath the skin.    Roast chicken until meat thermometer inserted into thickest part of thigh registers 180 degrees for about 2 hours or until what the package states.  let stand for about 10 mins before cutting.
