You can always experiment with your choice of fruit to work with your allergy restrictions.

6 cups of peaches – thawed if frozen

3/4 cup packed brown sugar, divided

1/2 tapioca flour

juice of 1/2 lemon

1 tsp ground cinnamon

1/2 cup of rice flour

6 tbsp cold butter cut into small pieces

Preheat oven to 375 degrees.  Grease an 8 or 9 inch square baking pan.  Place peaches in a large bowl.  Add 1/2 cup of brown sugar, tapioca flour, lemon juice and cinnamon; stir until well combined.  Place in a prepared pan.

Place rice flour, remaining brown sugar and butter in a food processor.  Pulse until mixture resembles loose crumbs.  Sprinkle mixture over the fruit mixture.  Make 20 to 30 mins or until golden brown.
