3/4 pound unsalted butter shortening, room temperature
1 cup granulated sugar
1 egg or substitution
1 cup white rice flour
1 teaspoon vanilla or zest of one lemon.
Place all ingredients in a medium bowl and combine until a dough forms.
Shape dough into a flat dish and refrigerate for at least one hour or tightly covered for up to ten days.
Preheat oven to 350 degrees.
Dust working surface and rolling-pin with rice flour. Roll out dough to 1/4 inch thickness a cut into shapes with cookie cutter. Place cookies on a cookie sheet line with parchment paper.
Bake cookies on a middle rack in a preheated oven for 12 to 15 mins or until the edges begin to turn brown.
Allow to cool and then decorate with your favorite frosting or confectioners sugar mixed with water.
