6 8 inch gluten-free tortillas

Cooking Spray

1 1/2 tablespoon olive oil

1 tbsp cinnamon sugar

Preheat oven to 400 degrees.  Cut tortillas in half, and cut each half into 5 strips to form 60 strips.  Divide the strips among 2 baking sheets lined with parchment paper.  Brush each strip even with olive oil.  Bake for about 10 mins or until browned, rotating baking sheets after 5 mins.
