Cappuccino Chip Parfaits

1 1/2 cup milk

3 tbsp instant espresso powder

1 pkg instant vanilla pudding mix (3.4 oz)

1 container 8 0z frozen whipped topping thawed

1/3 cup mini chocolate chips

In bowl, combine milk and espresso powder, stirring until coffee powder is dissolved.  Add pudding mix: whisk until smooth and blended.  Let stand for 5 mins until the  mixture thickens.

To assemble in each of the four parfait glasses layer 2 tbsp pudding, 1/4 whipped topping, 1 tsp chocolate chips, 1/4 cup pudding, 1/4 whipped topping and 2 tsp chocolate chips.  Divide remaining pudding and whipped topping evenly between the glasses.  Sprinkle with remaining chocolate chips.  Refrigerate until ready to serve.
