Substitutions have to be made sometimes in the spice area.  Say for instance one is allergic to black pepper.  So this page is a listing of combos going to be great spice combinations that you can make and store:

Garlic, rosemary, parsley, and chives, then served with onion ketchup (without HFCS) –

Alternative: Substitute 1 cup ketchup and 1/2 to 1 teaspoon liquid smoke seasoning for 1 cup barbecue sauce.
To marinate or rub:
To marinate – place chicken in a shallow dish or 1 gallon sealable plastic bag.  Add the marinade of your choice and refrigerate for at least 1 hour up to 12 hours.  The longer it marinates the more intense the flavor.  Take the meat and remove it from the container and pat dry before grilling or broiling.
To use the rub – coat chicken with the dry rub of choice up to 30 mins before grilling or broiling.

Chili Powder

Makes 4 Tbsp.
2 Tbsp. ground chilis (or good quality Hungarian paprika)
1 Tbsp. ground oregano
1 Tbsp. ground cumin
Mix it well. How hot this is depends on how hot your chilis are. If you want it hotter substitute a little cayenne pepper for the ground chilis.

 

Italian Dressing
1 c. sunflower seeds soaked (optional)
1/4 c. extra virgin olive oil
1/4 c. lemon juice
1/2 tsp sea salt
1/2 to 1 tsp dried basil
1/2 to 1 tsp dried oregano
1/2 to 1 tsp dried thyme
Combine ingredients and serve.

 

Herbs De Provence
1 tbsp thyme
1 tbsp chervil
1 tbsp rosemary
1 tbsp summer savory
1 tsp lavender
1 tsp tarragon
1 tsp marjoram
1/2 tsp oregano
1/2 tsp mint
2 chopped bay leaves
Mix all together and store in a tightly covered bottle.

 

Cajun Spice Mix
1/4 cup of salt
2 tbsp paprika
1-1/2 tbsp. onion powder
1 tbsp garlic powder
1 tsp dried oregano
1/4 tsp dried thyme
1/4 tsp ground mustard
1/8 tsp ground cloves
Mix all together and store in a tightly covered bottle. (I have alleviated the ‘black pepper’) from this combination.

 

 

Jamaican Jerk Spice
2 tsp ground thyme
1 tsp dried parsley
1 tsp ground allspice
1/4 tsp ground cinnamon
1 tsp paprika
1/4 tsp ground cumin
2 tsp sea salt
1/4 tsp ground nutmeg
2 tsp fine grain sugar
2 tsp dried chives
Mix all together and store in a tightly sealed container.

 

 

Barbeque Seasoning
1/2 tsp cumin seeds
1/2 tsp thyme
1/2 tsp marjoram
1/2 tsp cayenne pepper
2 tsp paprika
1 tsp mustard powder
1/2 tsp salt
1 tbls light brown sugar

 

 

Another Cajun Seasoning Mix
1 tsp paprika
1 tsp ground fennel seed
1/2 tsp ground cumin
1/2 tsp mustard powder
1 tsp cayenne
1 tsp thyme
1 Tsp oregano
1/2 tsp sage
1/2 tsp salt
1 to 2 garlic cloves
1/2 small onion

 

 

Sweet and Savory Dry Rub
2 tsp light brown sugar
2 tsp dry mustard
1 tsp onion powder
1/2 tsp kosher salt

 

 

Indian-Spiced Marinade
1/2 cup grated onion or finely chopped
1/4 cup lemon juice
2 tbsp olive oil
2 tbsp garam masala
1 tsp salt
