2 tbsp olive oil
1 tbsp each smoked paprika and chopped fresh rosemary
1 tsp each chili powder, garlic powder and onion powder
4 lbs boneless pork loin roast
3 onions, peeled and cut into wedges
8 oz baby carrots
Heat oven to 450 degrees. In bowl blend first 6 ingredients; season with salt if desired. Rub mixture over pork.
Place pork in roasting pan, roast 10 mins. Reduce oven temperature to 325 degrees. Add onions and carrots.
Cook 1 hour and 30 mins or until inserted thermometer reads 155 degrees basting occasionally. Let set for 10 mins before slicing.
