Zesty Lime Chicken
In resealable plastic bag combine 1 lb cubed chicken; 3 tbsp olive oil; 1 1/2 tbsp red wine vinegar; zest and juice of 1 lime; 1 tsp chili powder; 1/2 tsp each smoked paprika, onion powder, and garlic powder and a pinch of cayenne. Let marinate at least 2 hours. Thread on to skewers and grill for 8 mins or until done.
Mint and Red Wine Lamb
In resealable plastic bag, combine 1 lb cubed lamb, 1/4 olive oil, 1/2 cup of red wine, 1/2 tsp dried oregano, 1 1/2 tbsp chopped mint, 1 tbsp chopped garlic. Let marinate for two hours. Thread lamb and desired veggies onto skewer and grill for 8 mins or until done.
