Great idea for a family meal or when you have company coming.

4 cloves garlic, peeled and minced
1/4 cup Dijon mustard
2 tbs minced fresh thyme
1 standing beef rib roast with bones (about 8 lbs)

Heat oven to 425 degrees. In bowl, combine mustard, garlic and thyme. Place beef on rack set in roasting pan. Spread mustard mixture evenly over beef. Roast for 30 mins. Reduce heat to 350 degrees. Roast 1 hour more or until thermoneter inserted in meat, not touching the bone reads 140 degrees for medium rare. Tranfer beef to serving plater; loosely cover with aluminum foil. let sit for 15 mins before slicing.
