Easy Cheesy Beef Enchiladas

1 1/4 lbs ground beef
1 onion, peeled and chopped
2 tbsp minced garlic
1 tbsp chili powder
1 can 16 oz fat-free refried beans
1 jar mild salsa 15.5 oz
8 burritos size gluten-free tortillas
1 can enchilada sauce
1 cup shredded cheese of choice

In skillet over medium high heat, cook first four ingredients for 8 mins.

Stir in beans and salsa; divide mixture evenly among tortillas. Roll or fold tortillas, then wrap each.

Heat oven to 400 degrees.  Spread 1/2 enchilada sauce in bottom of casserole dish.  Top with tortillas, remaining sauce and cheese.  Bake for 20 mins.
