1/4 cup red wine vinegar
2-3 tablespoons fresh lemon juice
1.2 teaspoon gluten-free Dijon-style mustard 2
1 small shallot or 1-2 garlic gloves finely minced
1 cup of olive oil
1/ 2 teaspoon dried oregano or marjoram
Whisk vinegar, lemon juice, mustard and shallot together. Pour olive oil into mixture in a slow stream, whisking to creat an emulsion. Add herb of choice. Taste and adjust seasonings if it needs a change.
