Cucumber-Yogurt sauce
This sauce can be served as a dip for chicken, or sandwiches and if it suits your taste over salads.
Makes 1 1/2 cups
3 inch piece of seedless cucumbers
1 cup plain yogurt
1/4 ts salt
garlic powder to taste… grate the cucumber over a medium bowl, add yogurt and salt blend well and then put into a serving bowl.
Cucumbers and Red Onion salad
Peel and thinly slice 3 cucumbers and 1 small red onion. Toss with 2 tbsp dill, 1 tbsp each lemon juice, olive oil and sugar. Season with 3/4 tsp salt and refrigerate covered for 2 hours before serving.
Cucumber hor d’ouevre
Peel 2 seedless cucumbers and cut into 3/4 inch slices. Using a spoon scrap out the middle of the cucumber and then fill with your favorite prepared dip.
Cucumber and Tomato Salad
There are many variations of this salad… I have done the salad sliced thin cucumbers and sliced then tomatoes… and I have also had it with both items cubed… the seasonings to the salad are wide and varied as well… but in simple ways you can always add your choice of seasonings like basil or oregano drizzled with olive oil. To keep the cucumbers from releasing to much liquid place them in the salad you can always drain them.
Eye Soothing Cucumber Compress
Reduces redness and irritation in about 5 mins.
1 tsp castor oil
1/2 cucumber, cut into 1/4 inch thick slices
Rub castor oil on one side of two cucumber slices and place them oil side down over each eye. After about 5 minutes, rinse with cool water.
