You can use any meat you desire for the recipe:

1/2 cup extra-virgin olive oil

3 tbsp fresh lemon juice

1 small shallot, finely chopped

1/2 tsp ground cinnamon

1 tsp dried or 1 tbsp fresh thyme leaves

1/2 tsp sea salt

2 pounds skinless, boneless chicken breasts cut into 1-inch cubes

8 ozs  shiitake mushrooms, stems removed

2 medium onions, peeled and quartered

10 wooden or metal skewers

In a large glass bowl, whisk olive oil, lemon juice, shallot, cinnamon, thyme, and sea salt until blended.  Toss chicken cubes into marinade, cover and refrigerate for 6-8 hours turning occasionally.  May marinate overnight.

Preheat the grill, remove the meat from the refrigerator.

If using wooden kebab skewers, moisten them in water first.  Assemble kabobs, by alternating each ingredient.

Grill 15 to 20 mins, turning frequently.  Serve hot.
