Spelt Biscuits

2 cups spelt flour

t tbsp baking powder

1 tsp sea salt

6 tbsp softened butter

2/3 cup milk (have made these with buttermilk)

Preheat the oven to 450 degrees.  In a large bowl, stir together the flour, baking powder and salt.    Then gradually add the softened butter, bit by bit.  Stir in the milk slowly until dough pulls away from the sides of the bowl.   You may need to adjust the amount of milk.  Pat onto a flour surface to about one inch.  Cut into biscuits and place on a baking sheet. The mixture may not turn out where you can roll it and cut into biscuits, you can take a spoon and drop a size for biscuits that is good for you on waxed paper.  They may end looking funny, but you can still butter them, jam them and they are delicious.

Bake in a preheated over for 12 to 15 mins, until the bottoms are a golden brown.
