1/3 cup butter

1/2 cup sugar

1 egg ( see egg replacement page)

1 tsp grated orange peel

1/2 cup orange juice

1/4 cup milk

2 cups all-purpose gluten free flour

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

Place butter and sugar in mixing bowl.  Attach bowl and flat beater to mixer.  Turn to Speed 6 and beat 1 min.  Stop and scrape bowl.  Add egg, orange peel, orange juice and milk.  Turn to Speed 4 and beat 30 seconds.

Combine flour, baking powder, baking soda and salt, and add to bowl.  Turn to Speed 2 and mix for 15 seconds or just until moistened.  Do not overbeat.

Fill grease muffin tins two-thirds full.  Make at 400 degrees for 20 to 25 mins.  Serve warm.
