This will make two 8 to 9 inch pies.
2 cups gluten-free flour blend of choice
2 tsp sugar
1 1/4 tsp xanthan gum
1/2 tsp salt
1/2 tsp baking powder
11 tablespoons organic shortening divided
6 tbsp ice water
Sift flour blend with remaining dry ingredients. Cut in half the shortening until mixture resembles coarse meal. Repeat with remaining shortening. Sprinkle water over the mixture and mix to combine, pressing dough into a ball as you work.
(To make pie crust seperate the ball into two equal portions)
