1/2 cup butter – 1 stick

4 oz cream cheese softened

1 cup gluten-free all-purpose flour blend

1/2 tsp xanthan gum

Fruit preserves – flavor of choice

Beat butter and cream cheese in a large bowl until smooth.  combine flour and xanthan gum in medium bowl; gradually add to butter mixture beating until a soft dough forms.  Divide dough in half; shape into disks.  Wrap disks lightly in plastic wrap.  Refrigerate for one hour.

Preheat over to 375 degrees.  Roll out dough, one disc at a time, on floured surface to 1/8 inch thickness.  Cut into 2 1/2 inch squares.  Spoon 1 tsp preserves into center of each square.  Bring up opposite ends of each square and pinch together to seal.  Fold sealed to one side.  Place 1 inch apart on parchment paper on a cookie sheet.  Bake 10 to 15 mins or until lightly browned, remove to wire racks and allow to cool completely.
