The great “side” that you can have with your hamburger, gluten-free “fried” onion rings. (this recipe is a work in progress)

1 medium onion slice into thin rings

1/3 cup gluten-free all-purpose flour blend

1/2 cup buttermilk or plain yogurt

1/4 tsp sea salt

Preheat oven to 475 degrees.  Prepare a cookie sheet with parchment paper.  Combine the flour, gum and sea salt into a bowl. (other seasonings if you want)

In another similar size bowl combine the buttermilk, and 1/4 cup + 1 tbl. flour. Whisk until a smooth batter is formed. This should be the consistency of a slightly loose pancake batter. If it’s too runny add 1 tbl. more flour.

Toss in the onion rings and mix until they are lightly coated.   Pour onto the baking sheet and separate the onions.  Cook for 15 to 20 mins or until golden brown, tossing the onions once or twice during cooking to make sure they get evenly browned.
