Almond Flour Crackers

Crackers for a tasty snack on a road trip or for an easy lunch.

2 cups almond flour (meal)

1/2 tsp sea salt

1 eggs (flax-seed substitute)

1 tbsp olive oil

Topping of choice (optional)

Preheat oven to 350 degrees. Combine flour and salt. Add in egg (or flax-seed mixture 1 tbsp flax-seed meal plus 3 tbsp hot water — let it set for about 3 mins) and oil. Blend and shape into two balls. Place each ball on a cookie sheet (lined with parchment) and roll into a thin layer (the thinner the more crunchy the cracker). Score into squares with a knife or pizza cutter.  Bake for about 15 minutes or until golden brown.  Cool then cut/break apart.
