1 can crushed pineapple

1 cup lite coconut milk

1/2 cup ice cubes

1/4 tsp coconut extract

2 cups vanilla frozen yogurt

fresh pineapple and maraschino cherries, optional

Drain pineapple well.  In blender, combine pineapple, coconut milk, ice and extract; process until smooth.  In batches, add frozen yogurt; process until smooth.  If desired, garnish with pineapple and cherries.
