Quick, simple and yet you can have a elegant dessert, think date night!

3 tbs unflavored gelatin

2 cups of cold water

1 cup of sugar

1 1/2 cups cold Champagne

1 1/2 cups cold ginger ale

1 cup of sliced strawberries

In pot, sprinkle gelatin evenly over cold water; allow gelatin to absorb the water for two minutes.  Bring water to a boil over high heat; stirring until gelatin is fully dissolved..  Remove from heat.  Transfer to a bowl and add sugar; stir until dissolved.

Stir in Campagne and ginger ale.  Refrigerate until thickened for about one hour.  Fold in strawberries; spoon into individual molds or one mold.  Refrigerate until firm, take approx three hours.  Unmold lightly coat in confectioners sugar and serve.
