3/4 granulated sugar or 1/2 cup of honey
1 cup hot water
2 tbsp fresh lemon juice
3 cups frozen raspberries
Line a 9×13 inch pan with parchment paper or wax paper. In a small bowl combine first three ingredients until sugar is dissolved. In a food processor blend raspberries until smooth. Add sugar mixture and pulse until combined. Pour mixture into prepared baking dish and put into the freezer. Stir every 30 mins, scraping frozen edges into center, for about 1 1/2 hours or until frozen. to serve, scrape granita with a fork into individual serving dishes.
