Just as a reminder do read the ingredient listing on ice cream, for if you are allergic to eggs or other items you might encounter them in your choice of ice cream.

1/3 cup of honey

1/2 tsp lemon juice

1/4 tsp gf vanilla extract

1/4 tsp cinnamon

3 tbsp butter

3 McIntosh apples, peeled, cored and sliced

1 pint of vanilla ice cream

In a skillet stir honey, lemon juice, vanilla, cinnamon, 2 tbsp butter and 1/4 cup of water and bring to a boil over medium heat.  Stir in apples, cook stirring often, until apples are tender and liquid begins to thicken about 7-8 mins.  Remove from heat and stir in remaining 1 tbsp butter.  Transfer to a bowl and let set for 10 mins.

Divide ice cream among 6 bowls.  Tope with apple mixture and serve immediately.
